Use 1/8 tsp. per 1 gallon milk, 1/4 tsp. per 2-5 gallons, and 1/2 tsp. per 5-10 gallons (follow your cheesemaking recipe!)

Can also be ordered in 125D and 250D packets. In order to make sure your cheese comes out correctly, make sure to follow the directions exactly. While you may be able to get away with some substitutions, it is important to keep measurements similar. Following the directions always leads to better tasting cheese.
